The Food Building
The brainchild of Kieran Folliard, the city’s famed serial food entrepreneur who made a name and fortune from Kieran’s Irish Pub and 2 Gingers whiskey, the Food Building brings together two top makers in the Twin Cities, Red Table Meat Co. and Baker’s Field Flour & Bread. An accessible food production hub and event space in Northeast Minneapolis, you can take a self-guided tour to check out the milling process of Baker’s Field or get a load of the salumi curing rooms of Red Table, or book a guided tour complete with tastings.
My pal Mike Phillips is an incredibly talented salumist, crafting the best dry-cured meats in the city from sustainably- and lovingly-raised hogs. From his spicy fennel and garlic salami to cured guanciale, I love every Red Table Meats product I’ve tasted. The founder of renowned Rustica Bakery, Steve Horton launched Baker’s Field with a passion for the fundamental ingredient that makes great bread—flour. His team is stone milling local whole grains into fresh flour and baking that flour into naturally leavened bread with a truly unique flavor profile that’s worth seeking out. You can find both Red Table and Baker’s Field products at the adjacent deli counter, farmer’s markets, local co-ops and specialty grocers like Surdyk’s cheese shop.
After a visit, venture next door to The Draft Horse—a cozy, velveteen bistro that uses the artisan foods produced on the premises in a craveable comfort food menu. It’s a symbiotic relationship. Red Table Meats charcuterie plates, chicken pot pies, braised cabbage and apples, limousin beef burgers on Baker’s Field buns and whisky onion soup all hit the spot on a snowy night.
