Ham & Apple Breakfast Hash
This easy yet satisfying breakfast hash is the perfect use for leftover ham after a big holiday feast. It hits all the right notes; salty bacon and ham mixed with sweet apples, and a little spice from the cayenne.
Breakfast Hash with Ham, Potatoes & Apples
Ingredients
- 3 cups diced Yukon gold potatoes
- 2/3 cup diced onion
- 1 cup diced apples
- 2 tablespoons fresh thyme
- 2 tablespoons fresh minced garlic
- 1/2 teaspoon cayenne
- 1/2 cup crisped minced bacon
- 2 cups diced ham
- 1/2 stick butter
- Salt and pepper
Instructions
Crisp about 4 strips of bacon in a large saute pan (it should equal about 1/2 cup minced, crisped bacon). Tip off rendered fat.
Dice the potatoes, apples and ham into 1/4 to 1/2 inch cubes. Dice the onion. Mince the garlic. Place a 3-quart pan filled with water over high heat until boiling. Add the potatoes, and cook for 2 minutes. Strain and cool.
Add the butter to the pan that you cooked the bacon in. Brown the onions and potatoes. Add the garlic, thyme, cayenne, salt and pepper. Stir.
Add ham, minced bacon and apple. Cook until hash is crisped. Season and serve topped with a fried egg (or poached, or however you prefer your eggs).
