- 1 cup rice wine vinegar
- 1 1/2 teaspoons mustard seeds, whole
- 1 1/2 pounds cucumbers
- 1 1/2 tablespoons kosher salt
- 1 cup sweet onions, sliced thin
- 1 cup granulated sugar
- 1/2 cup cider vinegar
- 1/4 cup light brown sugar
- 1/2 teaspoon celery seeds
The Ultimate Sandwich Pickle
I love these pickles, they have a perfect balance of sweet and sour, with an extra crunch from the onion. Pair with your favorite sandwich or summertime burger and you’ve got a match made in heaven.
Slice cucumbers to about 1/8-inch thick on a mandolin. Combine with salt.
Chill for one hour. Drain and rinse.
Combine sugar and remaining ingredients in a medium saucepan, bring to a simmer (making sure the sugar has dissolved). Remove from heat.
Place the cucumber slices in a jar. Pour the hot vinegar over the cucumbers, allow to cool for one hour.
Cover and refrigerate.
