Perfect for the Ginger Lover in Your Family

Triple Ginger Chocolate Chip Cookies
- 1 cup dark brown sugar
- 1/4 cup dark molasses
- 2 eggs
- 1/3 cup butter, cut into small chunks
- 1 1/4 cup flour
- 1 cup whole wheat flour
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon salt
- 2 tablespoons fresh ginger
- 2/3 cup crystallized ginger, finely chopped
- 1 cup chocolate chips
Preheat oven to 350 degrees.
Cream together the sugar, molasses, eggs and butter.
In separate bowl, mix dry ingredients together.
Add the creamed mixture to the dry ingredients.
Stir the fresh ginger, crystallized ginger and chocolate chips into the batter.
Drop the batter by the teaspoonful onto a cookie sheet lined with parchment paper.
Bake for 10 – 12 minutes.
