Lobster Rolls, Two Ways

Here are two easy recipes for everyone’s favorite summer sandwich, the lobster roll. Do you prefer mayonnaise or brown butter? I couldn’t decide, so I’m showing you how to make both. A buttered and toasted bun stuffed with fresh lobster is essential, after that dress it up the way you like it.

Ingredients

Lobster Rolls with Mayo

  • 2 live lobsters
  • Potato rolls
  • 1 tablespoon butter
  • 2 tablespoons red onion, minced
  • 1 rib celery, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon mayonnaise
  • Salt
  • Pepper
  • Chives, chopped for garnish

Brown-Butter Lobster Roll

  • 2 live lobsters
  • Potato rolls
  • 5 tablespoons butter
  • Chives, chopped for garnish

Instructions

Lobster Roll with Mayonnaise

SERVINGS: 2

In a large pot of boiling salted water, cook the lobsters until they turn red, about 8 to 10 minutes. Allow the lobsters to cool, then remove the meat (watch this tutorial for shelling a lobster) and chop into ½-inch pieces.

Place a skillet over medium heat and add a tablespoon of butter. Toast the buns on both sides. Reserve.

In a mixing bowl, combine the lobster meat with the red onion, celery, lemon juice and mayonnaise. Season with salt and pepper.

Fill the toasted buns with the lobster mixture and garnish with chopped chives.

Brown-Butter Lobster Roll

Instructions

SERVINGS: 2

In a large pot of boiling salted water, cook the lobsters until they turn red, 8 to 10 minutes. Allow the lobsters to cool, then remove the meat and chop into ½-inch pieces. Be sure to save your shells to make shellfish stock.

Place a skillet over medium heat and add one tablespoon of the butter. Toast the buns on both sides. Reserve.

Place the remaining 4 tablespoons of butter in a skillet over medium heat. Cook until the butter starts to brown and smell nutty, about 4 minutes.

Fill the toasted bun with the lobster meat and drizzle with the browned butter. Garnish with chives.
