Blistered Shishito Peppers

I can’t think of a better bar snack than these gorgeous Japanese peppers. They are mostly mild, although you may bump into a spicy one on occasion. This is my favorite way to prepare shishito peppers, blistered directly on the coals with a simple dressing of salt and lemon juice.

Ingredients

  • 1 pound whole shishito peppers
  • Salt
  • 1 tablespoon vegetable oil
  • Squeeze of lemon

Instructions

SERVINGS: 4

Light a chimney full of natural hardwood charcoal. When it’s white hot, dump into the bottom of a charcoal grill. Tap the coals lightly to get rid of some of the ash.

Season the shishito peppers with salt and coat in vegetable oil. Place the peppers directly on the hot coals and cook until blistered on all sides, turning frequently for about 2 to 3 minutes.

Remove from the grill and squeeze half a lemon over the peppers. Enjoy!
