Modern Italian Cuisine
The emblem of the Roman Empire and an acronym for Senatus Populusque Romanus, SPQR roughly translates to “The People and Senate of Rome.” At SPQR, executive chef Matthew Accarrino takes traditional, rustic recipes inspired by ancient Italy and reinvigorates them with 21st century flavors and techniques. Smaller plates such as the chicken liver mousse with balsamic gelatina and the pork terrine, made from all the trimmings of the pig and garnished with truffle agrodolce are phenomenal. The heavenly handmade pastas are refined, soulful versions of Italian classics. Chef Accarino’s creativity shines in dishes such as 26-layer nasturtium pasta lasagna with braised duck, or smoked fettuccini with sea urchin, bacon and a soft quail egg. Wine lovers will swoon over the exceptional all-Italian wine list that emphasizes small, lesser-known producers, curated by co-owner and award-winning sommelier Shelley Lindgren. The attention to detail when it comes to the food, wine and service is outstanding here. Try to score seats at the chef’s counter for the best view in the cozy dining room.
