Few Minnesotans have done more for local farmers and purveyors than Tracy Singleton. You can bet everything served at her iconic Seward restaurant was grown organically, sourced ethically, and hails from some cool Midwestern farm. She’s long been an industry leader in sustainable, eco-friendly practices, and has used her restaurant as a vehicle to give back to the community—whether it’s supporting local non-profits through Birchwood Boost or advocating for healthy school lunches and GMO labeling.
Open all day, the cafe caters to early birds with its savory string bean, quinoa and feta waffle served with strawberry-rhubarb chutney, lemon dill butter, bacon lardons and a sunny-side up egg. You could do a light lunch with their fresh seasonal salad of strawberries, spicy greens and nasturtiums, or indulge in a Tour de France burger—topped with Red Table ham, blue cheese walnut spread, garlic scape aioli and grape-rosemary salsa. For dinner, they’re serving everything from a shareable plate of chicken wings in a piri piri sauce to hearty entrees like Khmer spiced pork ribs, a summer vegetable flatbread with lemon chevre mouse and housemade linguini with wild mushrooms and breadcrumbs.
