We’re making temaki, a Japanese hand-rolled sushi, on AZ Cooks tonight! It’s super fun and easy to make at home.


Temaki 101


  • Japanese short grain rice
  • Rice wine vinegar
  • Sugar
  • Mirin
  • Seaweed paper (Nori)
  • Salmon roe 4-8oz
  • Tuna
  • Hamachi
  • Uni (really good stuff in beautiful tongues)
  • Eel
  • Cucumber
  • Avocado
  • Scallions
  • Wasabi


Cook your short-grain rice according to the package instructions. Once it’s cooked, season with rice wine vinegar, sugar and mirin in a 1:1:4 ratio.

Cut the nori into 3 or 4 inch pieces. Place a couple of tablespoons of the seasoned rice in the nori, and add the toppings of your choice. I like fresh hamachi and tuna, tongues of uni, salmon roe, eel, cucumber, avocado, scallions… you name it!
