Poached Plums with Red Wine & Rum
Ingredients
- 12 plums, firm and ripe but not mushy
- 2 cinnamon sticks
- 3 tablespoons brown sugar
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 1 bud star anise
- 1/4 vanilla bean, split
- 1 cup dark rum
- 2 cups red wine
- 6 cloves
Instructions
Place all the ingredients into a 14-inch saute pan. Add warm water to just about cover the plums. Bring to a simmer and continue simmering for 15 minutes, turning plums every 5 minutes.
Remove plums to a serving platter. Reduce sauce until almost glazy. Strain over plums and serve at room temperature.
