The Easiest Way to Cook Asparagus
By Andrew Zimmern
It’s springtime and asparagus is abundant in the markets. I like to toss it in a wok with an umami-rich black bean sauce, serve it as a salad with poached lobster, blitz it into a springy pesto and shave ribbons of it for classic fettuccine primavera. But more often than not, I simply toss asparagus with a little olive oil and char it under the broiler or on the grill. I can’t think of an easier or more delicious vegetable side dish this time of year.
Watch me make this recipe:
Broiled Asparagus Recipe
- 1 pound asparagus, trimmed
- 1 tablespoon olive oil
- Freshly ground black pepper
- Lemon wedges, for serving
Preheat the oven to broil on high. Place your oven rack near the top of the oven.
Trim the asparagus and place in an even layer on a sheet pan. Drizzle with olive oil, and season with salt and pepper. Broil for 3 to 4 minutes, until the asparagus just starts to char. Serve with lemon wedges.
