Apple & Manchego Salad
Ingredients
- 4 Honeycrisp apples, peeled
- 2 tablespoons lemon juice
- 5 ounces of Manchego cheese, in one block
- 2 shallots, minced very fine
- 1/4 cup minced chives
- 6 tablespoons olive oil
Instructions
On a mandolin, julienne the apples and immediately toss in the lemon juice. Julienne the cheese and add to the apples with the chives, shallots, and olive oil. Toss gently. Season with salt and more lemon if needed and serve immediately.
