Peruvian Grandma Food

Gaston Acurio is Peru’s most renowned chef, an incredible ambassador of Peruvian cuisine who’s carving out a global restaurant empire of Andean flavors. He’s devoted the last two decades to elevating his country’s unique culinary heritage. In doing so, he’s launched a cooking style that’s won the hearts of locals and the world alike. From fishermen to farmers, Acurio treats ingredients and purveyors with a very serious respect, and it shows in his food. Panchita, one of a handful of restaurants Acurio owns in Lima, pays homage to Peruvian grilled meats, or anticuchos. They’re serving traditional wood-fired comfort food—meats like octopus, shrimp, beef, swordfish, and chicken marinated in an aji  amarillo chile paste, and then grilled over an open flame. Flavorful, tender and cooked perfectly, this is a fantastic version of Peruvian street food.

BUT, the best food there is the Peruvian grandmother food. Whole roasted leg of baby goat swimming in its own juice, carved at the table… Pastele de Choclo bursting with fresh corn flavor… a stuffed pepper that is finished in the wood-burning oven, filled with a homey beef braise that’s been simmering and blooming for 36 hours before it’s done.

Panchita sits in the shadows of La Mar and Asrtrid y Gaston, but deserves to be visited by anyone hitting Lima for the first time.
