Quebecois Sugar Shack of Your Dreams
Just 30 minutes outside of Montréal you’ll find Cabane à Sucre, a brilliant eatery where Martin Picard is reinterpreting maple-sugar-shack cuisine. Chef Picard is considered the greatest of the great in this neck of the woods, with a handful of restaurant that serve some of the best and most interesting food you’ll ever eat. His seasonal sugar shack is located on a farm where he’s tapping his own maple trees for syrup and raising his own pigs. There’s a fixed menu for both apple and syrup season, and trust me, you’ll love whatever you’re served. They steam smoked hams in the rafters over the maple kettles before air drying them some more. They pile snow on your table and cool the maple ‘taffy’ in it. They serve whole quarter hogs, and insane cornish hens over a bed of gnocchi and foie gras. This place is the ultimate example of the hand crafted movement in the food world.
