Over the years, working with fishermen, aquaculture farmers, and coastal communities I’ve learned our relationship with the water isn’t broken beyond repair. On the flip side, the cod that once competed for space in New England waters aren’t coming back. But I’ve seen hope returning to the protected waters of Toubakouta in Gambia, watched hatcheries in Bangladesh give local fishers their first reliable income, and witnessed innovations in aquaculture that will change everything when it comes to feeding our planet.

We’ve designed this cookbook to be accessible, practical, and purposeful. Our inspirations are global, taken from our vast experiences as travelers, cooks, anthropologists, and neighbors. We’ve organized the recipes around the idea that many species of fish can be used interchangeably, depending on what’s freshest and most sustainable where you live. But keep in mind, this is not just a collection of recipes—it’s a narrative about why seafood matters, how it has sustained cultures for millennia, and why we need to protect and enhance it for generations to come.
