An Artisanal Cajun Salumeria
Adjacent to chef Donald Link‘s famed Cochon (a.k.a. the Cajun restaurant of your dreams), Cochon Butcher is a sandwich shop, wine bar and salumeria specializing in Louisiana-style housemade charcuterie, terrines and sausages. Link is bringing back traditional old-world techniques and authentic Cajun flavor with the andouille, boudin, tasso and head cheese (among many other porky creations). There’s a menu of small plates and sandwiches, including the out-of-this-world muffuletta piled high with house-cured meats and a briny olive salad. The pastrami, pork belly and cubano sandwiches are all worthy choices, and next to a side of pancetta mac n’ cheese or marinated Brussels sprouts, you couldn’t ask for a better lunch.
