Chefs Erik Anderson and Josh Habiger have been named to Food & Wine magazine’s Best New Chefs 2012 list, yet The Catbird Seat was already considered by food lovers as one of the country’s hottest destinations and toughest reservations. This incredibly creative restaurant provided memorable food and drink. The 10-course tasting menu was accompanied by thoughtful beverage pairings from Jane Lopes and was bookended by “Oreos” made with Parmesan cream inside a porcini cookie and vanilla cream inside a coffee cookie. A few of the many highlights included: a spicy chicken-skin chip with sorghum, smoked paprika and Wonder bread puree dots (accompanied by a Champagne cocktail with a beer infused sugar cube, sake and bourbon), sea trout tartare with smoked char roe, dill, and cornichon pudding, braised pork belly served in a shrimp bisque with pickled pistachios and jalapeno cream (accented by a rose wine mixed with vermouth and herbal bitters), pigeon with pigeon liver mousse, hay infused yoghurt, dried morels and cocoa, a grass fed beef filet covered with a cream of spring garlic, raw shallots and a black currant puree, a lime sorbet and cucumber semi-fredo with Thai basil and lemongrass, and charred oak wood ice cream with cherry crisps and bourbon balls. Sitting at the 32 seat U-shaped counter which surrounds the kitchen and interacting with the chefs is part of the fun of this intimate restaurant in the historic Patterson House.
