An unassuming joint in New Orleans’ Treme neighborhood, Willie Mae’s Scotch House is my Southern comfort food valhalla. They serve the best fried chicken I’ve ever tasted, but the beans alone are worth a trip from anywhere. Now in her late 90s, Willie Mae recently hung up her apron string, passing the business on to her great-granddaughter, Kerry Seaton. Watching these ladies cook is akin to watching Picasso paint. The key to spectacular fried chicken is knowing when each piece is cooked perfectly—that’s why everything is made to order. The seasoning is fantastic, the crunch is perfect. A visit to New Orleans is incomplete without a meal at this famous fried chicken joint.
