Russian dressing—and yes, where I’m from, we call it Russian dressing not Thousand Island—is one of my favorite condiments. Used as a dip, sandwich spread or salad dressing, it’s piquant, balanced and delicious. I especially love it on a brisket sandwich with melted gruyere cheese.

Andrew Zimmern Cooks: Russian Dressing
- 1/2 cup mayonnaise
- 2 tablespoons sweet pickle relish
- 1 tablespoon fresh dill, minced
- 1 tablespoon fresh tarragon, minced
- 1 tablespoon lemon juice
- 1/3 cup Heinz chili sauce
- Several dashes hot sauce
Whisk together all of the ingredients until well combined. Season to taste and refrigerate until ready to use. The longer it sits the better, to allow all of the flavors to meld together.
