True Southern Comfort
Located in an unmistakable pink shack on the outskirts of Charleston, Martha Lou’s is the place to get your Southern comfort food groove on. Sean Brock turned me on to this tiny “meat-and-three” a few years ago and I’ve been dreaming about it ever since. Martha Lou and her daughter are cooking delicious food from humble ingredients, with a generations-old knack for making the most of what’s on hand. Her chitterlings (pork intestines) are stewed for hours with onion, salt and pepper, yielding a “just-barnyardy-enough” flavor and melting texture. Other stand out dishes include the smothered pork chops, cornbread, stewed okra, collard greens and fried chicken. My favorite dish has to be her beans. Sometimes they’re lima beans, sometimes butter beans, always made from an old family recipe, and cooked with neck bones, pig tails, onions and sugar. These are the best beans I’ve ever had. Be sure to save room for homemade pie.
