Honest Northwestern Cuisine
Chef Jenn Louis and her husband, David Welch, opened Lincoln on North Williams in 2008, with a focus on simple, ingredient-driven cuisine. Her ever-changing menu is full of made-from-scratch specialties that highlight seasonal produce from the Pacific Northwest, most of which comes from local farms and purveyors. On my visit to Lincoln, I tried kale gnocchi with braised elk neck and tongue. It was a dish that merged the best of Italian farmhouse cooking with everything that is cool and hip about Portland right now. Her gnocchi is fantastic, so if it’s on the evening’s menu, don’t pass it up. Other stellar dishes include stirred risotto with basil, prosciutto and a poached turkey egg; grilled octopus with nepitella, fennel, mizuna and pimenton; and Stikine river king salmon with salicornia and bottarga. Even the simple roasted half chicken with shoestring potatoes is to die for. Louis’ food strikes a perfect balance between old and new, modern and classic, rustic and refined. And while you’re in Portland, check out the duo’s more-casual Sunshine Tavern for killer upscale pub fare and pizzas (gotta love the hen egg pizza with oregano and parmesan).
