Masters of Xi’an Cuisine
Jason Wang of Xi’an Famous Foods fame is a phenomenal young entrepreneur. The family-run Chinese food empire is a result of an amazing combination of old world techniques – David Shi, the father, is a great chef from China who opened the first Xi’an Famous Foods in the Flushing mall in 2005 – and new world ambition, which is Jason’s drive to recreate and grow the company. Their latest venture is Biang!, a sit-down restaurant in the heart of Flushing that serves the same authentic cuisine from the western Chinese city of Xi’an as their other outposts, yet in a decidedly hipper atmosphere. Be adventurous and start with a few orders of skewers – grilled over charcoal and seasoned with cumin and chili powder, the chicken heart, beef tendon and pork intestine skewers are all fantastic. The cumin-spiced lamb with longhorn peppers served over hand-ripped noodles is the best I have tasted in this country, and you certainly can’t go wrong with the long-pulled longevity noodles with fresh young chicken.
