Portland’s Thai Destination
Andy Ricker has garnered a national reputation (and a James Beard award) for his Southeast Asian cuisine at Pok Pok. Ricker doesn’t compromise traditional ingredients to cater to the Western palate, so don’t expect Asian “fusion” here – instead you’ll find a menu composed of foods he ate in restaurants, homes and markets while researching the flavors of the region. This white guy from Vermont may be an unlikely face of Thai cuisine in the U.S., but when you taste his dishes you won’t question his expertise. Try the famous Vietnamese-style fish sauce wings, the traditional green papaya salad, Thai sausage and laap. Keep your eye out for expansion as Ricker opens new restaurants under the Pok Pok umbrella in Portland and NYC.
