Cookbook: Kramarczuk’s Family Classics

Cookbook: Kramarczuk’s Family Classics

Preserving Eastern European Heritage

Kramarczuk’s Sausage Company is an iconic Twin Cities restaurant and deli, serving Eastern European sausages and comfort classics for more than 50 years. The Kramarczuk family’s story is an ultimate immigrant success story. Wasyl and Anna Kramarczuk moved to the United States to escape war-torn Europe in 1949. In the 50s, they bought an established butcher shop in Northeast Minneapolis, started making sausages and quickly became a neighborhood fixture, known for fostering a vibrant Eastern European community. In addition to deli sandwiches and killer sausages, bratwurst and kielbasa, they serve made-from-scratch traditional fare – pork- and rice-filled cabbage rolls, potato and cheese dumplings, piroshok (buns filled with eggs, mushrooms and ground beef), and Polish sausages stewed in sauerkraut. This year, Kramarczuk’s was designated an American Classic by the James Beard Foundation, and lucky for us, they published a cookbook with the family’s Ukrainian and Eastern European recipes. Now you can re-create your favorite dishes at home, from hearty soups and Slavic salads to Nordeast beer brats and traditional babka. Order your copy here.

Sneak Peak: These Vushka, or mushroom dumplings, are perfect cool weather comfort food.
