Andrew Zimmern Cooks: Tzatziki Sauce

Tzatziki Sauce

By Andrew Zimmern

One of my favorite condiments, tzatziki is a traditional Greek yogurt sauce packed with cucumber and herbs. It’s an essential element of any Mediterranean meze spread that can be used as a dip for fresh vegetables, a salad, or a cooling topping for spicy dishes, roasted meats and grilled fish. For the creamiest consistency, be sure to use a thick Greek-style yogurt.

Instructions

SERVINGS: MAKES ABOUT 3 CUPS

Sprinkle the cucumbers lightly with salt and drain in a colander for 30 minutes.

Meanwhile, place the yogurt in a mixing bowl. Set aside.

Add the garlic cloves to a mortar with the coriander seeds and salt. Grind into a paste and add it to the bowl with the yogurt. Next, add the dill, mint, white pepper, olive oil and red wine vinegar.

Gently squeeze the cucumbers and add to the bowl, then stir to fully combine. Scoop into a serving bowl and garnish with additional herbs.
