This delicious roasted red pepper relish is great on burgers, brats, hot dogs, deli sandwiches and even as a dip with fresh vegetables or chips.

Roasted Red Pepper Relish


Ingredients

  • 3 red bell peppers
  • 1 fresno pepper
  • 1/2 red onion
  • 1 tablespoon olive oil
  • 1 teaspoon red wine vinegar
  • 1/4 cup minced parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 to 2 tablespoons lemon juice

Instructions

Place the peppers and onion in a bowl, season with salt and pepper and olive oil.

Lay the peppers and onion on a sheet pan and place in an oven at 375 degrees. Roast for 20-30 minutes until the skin is slightly charred and blistering.

Remove and place in a large bowl, cover with plastic wrap and allow to steam for 5 minutes.

Peel and seed the peppers, straining off the pepper juice.

Place peppers, onion, vinegar and parsley into a food processor and blend until smooth. Add the lemon juice, and season with salt and pepper.

Use the roasted red pepper relish as a spread for sandwiches, or as a dip with fresh veggies.
