If you get tired of jarred tomato sauce like I do, try making your own.  This sauce goes great with pasta, meat and veggies.  This recipe makes 3 quarts so there is plenty to freeze.

This sauce pairs perfectly with my Yucatan Shrimp with Green Chiles.

The gravy doesn't take long at all to make, and the leftover chicken isn't that bad either.

Roux can be used to thicken just about any sauce, just make sure to cook the flour thouroughly.

Demi glazes are achieved when the stock has reduce to a thickness where it coats a spoon.

Glazes are syrupy and are reached shortly after sauce consistency has been achieved so be sure to watch your pot and not to over reduce.

This is great with chips or on top of Chicken Mole Tamales.
