Poached Salmon In Its Own Sauce

In a 12-inch saute pan over medium, heat place the vegetables, wine, juices, butter, ginger, and saffron.
Add the salmon, poach for 2-3 minutes. Flip fish and poach for another 2-3 minutes and coverpan. Poach for 90 seconds and remove the salmon, reserving to a platter. Reduce sauce for a little bit to tighten it up, perhaps another minute or so at a simmer. Season with salt and pepper and serve.
