Poached Salmon In Its Own Sauce

Description

A great poached fish dish can be as simple as simmering a piece of fish in white wine with a few vegetables and herbs. Taste this dish and you will see what I mean.

Ingredients

  • 4 pieces of 6 ounce filets of salmon
  • 1⁄2 c diced celery
  • 1⁄2 c diced carrot
  • 1⁄2 c diced cucumber
  • 1⁄2 c diced tomato
  • 1⁄2 c diced mushroom
  • 1 c late harvest riesling or gewurztraminer
  • 1⁄2 c fresh squeezed orange juice
  • 2 T sweet butter
  • 1 T fresh ginger cut into thin julienne
  • pinch of saffron threads
  • 1 T lemon juice
  • 2 T chopped fresh tarragon
  • 2 T chopped fresh parsley

Instructions

In a 12-inch saute pan over medium, heat place the vegetables, wine, juices, butter, ginger, and saffron.
Simmer for 5 minutes.

Add the salmon, poach for 2-3 minutes.  Flip fish and poach for another 2-3 minutes and coverpan.  Poach for 90 seconds and remove the salmon, reserving to a platter.

Reduce sauce for a little bit to tighten it up, perhaps another minute or so at a simmer. Season with salt and pepper and serve.
