Adding onions, garlic, ginger, dried spices, or any ingredient to oil before cooking a larger item a layer of flavor is incorporated. Take care to not have smoking hot oil, the aim is not to fry onions or garlic or spices, but to heat them gently so that the flavor of whatever ingredient that is being added is spread throughout the oil and therefore spread throughout your dish. |
