Description

A great side or appetizer for main dish you choose to cook.

SKILLS USED:

Trimming asparagus

Ingredients

  • 2 lb trimmed asparagus
  • 8 oz cremini mushrooms, thinly sliced
  • 2 T fresh thyme leaves
  • 2 T fresh lemon juice
  • 6 T olive oil + extra to brush on asparagus before roasting
  • 1 T truffle oil (optional)
  • shaved curls of Parmigiano-Reggiano for garnish
  • salt and pepper to taste

Instructions

Brush trimmed asparagus with just enough olive oil to coat sparingly.  Sprinkle with sea salt. Roast on a cookie sheet for 7-8 minutes in a 500 degree oven.

 

While those are roasting, combine the thinly shaved cremini mushrooms with fresh thyme, fresh lemon juice, olive oil and salt and pepper. Try adding truffle oil for an elegant touch. 

 Arrange the asparagus on a platter, arrange the mushroom mixture on top of the spears and garnish with shaved curls of Parmigiano-Reggiano .
