Caramelizing Onions

Caramelizing onions is the best way to get a great mellow onion flavor. What happens is that the sugars stored in the onion are released as liquids and brown, adding a nutty flavor. The onions should get quite brown and if the pan gets a little too sticky with the caramelizing sugars, sprinkle with a little water to deglaze and lift up the brown goodness.
