Shrimp Sate with Peanut Sauce

Description

These shrimp are great for a mid-winter pick-me-up or outdoor grilling in the summer, just double up on the marinade and the amount of shrimp, there's enough sauce for two large batches  I always use Penzey's Singapore seasoning for these.

Ingredients

  • 2 lb 16-20 count shrimp, peeled and cleaned
  • 3 T sugar
  • 3 T curry powder
  • 3 T lime juice
  • 3 T fish sauce
  • 3 T soy sauce
  • satay sauce
  • 2 T ground fresh ginger
  • 2 T ground garlic
  • 2 T ground panuts
  • 1 minced dried red chile
  • 1 diced tomato
  • 2 T ground lemon grass
  • 1 T tumeric
  • 3 T asian seasoning
  • 1⁄4 c Peanut Oil
  • 1⁄3 c sake
  • 1⁄4 c each soy sauce, sugar mirin
  • 14 oz can coconut milk
  • 1⁄4 c peanut butter

Instructions

Combine marinade ingredients and toss with the shrimp.
Marinate for 24 hours.

Soak 40 wooden skewers in water for 1 hour and drain
Thread shrimp onto skewers.
Grill over medium hot coals and serve with the sauce for dipping.

Satay Sauce
Makes sauce for 2 batches of skewers

Place the oil in a large saute pan and add the aromatics
Sweat over low heat for 10 minutes, stirring

Add the sake, soy, sugar and mirin

Simmer for 10-12 minutes
Add coconut milk, peanut butter

Simmer to a nice rich thick consistency
