How to Kill a Lobster

Dispatching a lobster is most likely what’s preventing you from cooking it at home, but learning the proper and most humane way to do it will make it less intimidating. I believe the most humane way to kill a lobster is to first put it in the freezer for 5 to 10 minutes. The lobster slowly goes to sleep in the freezer, which makes it easier to handle, and frankly, separates the dispatcher from the act. You don’t want to leave the lobster in the freezer long enough to kill it, because that will also freeze the meat, which you don’t want. Next, plunge a sharp chef’s knife into the carapace behind the eyes. Now it’s ready to cook—boil it, steam it, or split it and place it under the broiler or on a hot grill.
