Street Food at Its Best

India’s fourth largest city, Hyderabad is home to a diverse mix of cultures and an extraordinary, complex cuisine. From dosas to biryani to 400-year-old recipes renewed, Hyderabadis pride themselves on their food. Whether you’re looking for a snack, a full meal or dessert, you can find it all among the dizzying array of food stalls in Hyderabad’s Charminar Market. After eating my way through the bazaar with a local guiding me through the chaos, my favorite discovery was Govind’s Dosas. It’s a popular food stand with lots of patrons who line up for crepe-like dosas made of rice and lentils. As Govind makes the dosas on the hot griddle, it’s like watching a ballet. Batter is poured and quickly spread into a thin circle, then topped with butter cubes, potatoes, tomatoes and onions, folded and served with a coconut-peanut sauce with toasted chiles and mustard seeds. I tried my hand at it, but lacked the grace that comes with years of experience. Leave it to the experts, it’s more challenging than it looks.
