Sweet & Tangy Pineapple Salsa

This chipotle-infused pineapple salsa pairs beautifully with any grilled meat or fish. Grilling the pineapple brings out its natural sweetness while adding a rich, smoky flavor and caramelized texture.

Grilled Pineapple Salsa

Ingredients

  • 1 small onion, sliced
  • 4-inch section of peeled pineapple, cut into 1-inch rings
  • 2 tablespoons peanut oil
  • 1 dried chipotle chile
  • 6 mint leaves, minced
  • 2 teaspoons minced cilantro
  • 1/4 cup water
  • Juice of 1 lime

Instructions

Brush the onion and pineapple with half of the oil. Grill over medium-high heat until caramelized and charred, about 3 to 4 minutes per side. Remove from grill, and chop into one-inch pieces, roughly.

Fry the chipotle chile in the excess oil for 10 seconds.

Remove chile from pan, add to a blender with all the other ingredients and pulse BRIEFLY.

Season with salt and pepper. Use within 8 hours.
